Ingredients

  • 1 cup water
  • 1 cup Alt Milk fresh almond milk
  • 2 tsp loose black tea leaves (or 2 tea bags)
  • 3 to 4 green cardamom pods (slightly crushed)
  • 1 small piece of fresh ginger (about 1 inch, grated)
  • 1 small cinnamon stick
  • 2 to 3 whole black peppercorns (optional)
  • 1 tsp jaggery or 2 to 3 drops of stevia (optional, to taste)

Instructions

  • Add water to a small saucepan and place it on medium heat.
  • Add crushed cardamom, grated ginger, cinnamon stick, and peppercorns to the water.
  • Let it come to a gentle boil and simmer for 3 minutes so the spices release their flavor.
  • Add the tea leaves and let it steep for 2 minutes.
  • Pour in the fresh almond milk and stir well.
  • Bring the mixture to a light boil on low heat. Do not let it boil vigorously.
  • Add jaggery or stevia if you want a sweet chai.
  • Strain into two cups and serve hot.

Tip: Use unsweetened almond milk for a clean spiced flavor. The natural nuttiness of fresh almond milk gives this chai a beautiful creamy body without any heaviness.
