A warming, spiced Indian chai made with fresh almond milk. Perfect for mornings and evening tea time. Dairy-free and naturally creamy.

Ingredients
- 1 cup water
- 1 cup Alt Milk fresh almond milk
- 2 tsp loose black tea leaves (or 2 tea bags)
- 3 to 4 green cardamom pods (slightly crushed)
- 1 small piece of fresh ginger (about 1 inch, grated)
- 1 small cinnamon stick
- 2 to 3 whole black peppercorns (optional)
- 1 tsp jaggery or 2 to 3 drops of stevia (optional, to taste)
Instructions
- Add water to a small saucepan and place it on medium heat.
- Add crushed cardamom, grated ginger, cinnamon stick, and peppercorns to the water.
- Let it come to a gentle boil and simmer for 3 minutes so the spices release their flavor.
- Add the tea leaves and let it steep for 2 minutes.
- Pour in the fresh almond milk and stir well.
- Bring the mixture to a light boil on low heat. Do not let it boil vigorously.
- Add jaggery or stevia if you want a sweet chai.
- Strain into two cups and serve hot.
Tip: Use unsweetened almond milk for a clean spiced flavor. The natural nuttiness of fresh almond milk gives this chai a beautiful creamy body without any heaviness.
