Ingredients
- 3 ripe bananas, mashed
- 1/2 cup almond butter
- 1/3 cup maple syrup
- 1.5 cups whole wheat flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 cup Alt Milk fresh almond milk
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- Whisk mashed bananas, almond butter, maple syrup, and almond milk in a large bowl until smooth.
- In a separate bowl, combine flour, baking soda, salt, and cinnamon.
- Fold dry ingredients into the wet mixture, mixing just until no dry streaks remain.
- Fold in chopped walnuts, reserving a few for topping.
- Pour batter into the prepared pan and top with reserved walnuts.
- Bake for 50 to 55 minutes, until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Tip: Don’t overmix the batter — it’s what keeps this loaf moist instead of dense.
