Ingredients
- 1 cup rolled oats
- 1/2 cup creamy peanut butter
- 3 tbsp honey or maple syrup
- 2 tbsp chia seeds
- 1/4 cup chopped dates
- 2 tbsp dark chocolate chips
- A pinch of salt
Instructions
- Warm peanut butter and honey together in a saucepan over low heat until smooth, about 2 minutes.
- Remove from heat and stir in oats, chia seeds, chopped dates, and salt until evenly coated.
- Let the mixture cool for a few minutes.
- Fold in dark chocolate chips once cooled (adding too early will melt them).
- Press the mixture firmly and evenly into a lined 8×8 inch pan.
- Refrigerate for at least 1 hour before slicing into bars.
Tip: These bars keep well in the fridge for up to a week, or in the freezer for a month — great for batch prepping.
