A light, protein-rich kheer using fox nuts and fresh almond milk. Great for digestion, suitable for fasting, and ready in 20 minutes.

Ingredients
- 2.5 cups Alt Milk fresh almond milk
- 1.5 cups makhana (fox nuts, lightly dry-roasted in a pan)
- 6 to 8 dates (pitted, chopped)
- 1/4 tsp cardamom powder
- A few saffron strands
- 1 tbsp chopped almonds for garnish
Instructions
- Heat almond milk in a pot on medium-low heat.
- Add roasted makhana to the warm milk.
- Cook for 10 to 12 minutes, stirring often, until makhana softens and the milk thickens slightly.
- Use the back of a spoon to gently press some makhana against the pot wall. This thickens the kheer naturally.
- Add chopped dates, cardamom, and saffron. Stir well.
- Cook for 3 to 4 more minutes.
- Remove from heat. Serve warm or chilled with almond garnish.
