Ingredients
- 1 cup rolled oats
- 10 to 12 medjool dates, pitted
- 3 tbsp Alt Milk walnut butter
- 2 tbsp desiccated coconut (plus extra for rolling)
- 1 tbsp flaxseeds or chia seeds
- 1/4 tsp cinnamon powder
- A pinch of salt
- 1 to 2 tbsp water (only if mixture feels too dry)
Instructions
- Add pitted dates to a food processor and pulse until they form a sticky paste.
- Add rolled oats, walnut butter, desiccated coconut, flaxseeds, cinnamon, and salt.
- Pulse again until everything comes together into a thick, sticky dough.
- If the mixture feels too dry, add water one tablespoon at a time and pulse again.
- Scoop out small portions and roll into balls between your palms.
- Roll each ball in desiccated coconut for an extra layer of texture.
- Place on a tray and refrigerate for 30 minutes to firm up.
- Store in an airtight container in the fridge for up to 7 days.
Tip: Walnut butter adds a deep, earthy richness to these energy balls that peanut butter simply cannot match. Make a big batch on Sunday and keep them in the fridge for a ready-to-grab snack all week long.
