Dairy-Free Cashew Milk Ice Cream

Ingredients:

  • 2 cups raw cashews (soaked for 4 hours or overnight)
  • 1 can full-fat Coconut Milk
  • ½ cup sweetener of your choice (such as maple syrup, agave, or coconut sugar)
  • 1 teaspoon vanilla extract
  • Optional: add-ins like chocolate chips, nuts, or fruit

Instructions:

  • Drain and rinse the soaked cashews.
  • In a blender, combine the soaked cashews, coconut milk, sweetener, and vanilla extract.
  • Blend until smooth and creamy.
  • If desired, add any add-ins like chocolate chips, nuts, or fruit and stir gently.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • Transfer the ice cream to a lidded container and freeze for a few hours until firm.
  • Serve and enjoy your homemade cashew milk ice cream!
